Vanilla Cupcake Recipe

Cupcakes are quite the trend these days, and everybody wants a yummy basic vanilla cupcake recipe that's also easy to use.  Vanilla remains the most popular flavor in America, not only in ice cream but also in the delicately decadent companion cupcake.  Vanilla cupcakes are the perfect base for showcasing creamy and delicious frosting, icings, or glazes.  A sprinkle of powdered sugar or cocoa is also a tasty way to top these single serving cake treats.

Home baked cupcakes will have a slightly different texture than those made in a bakery or from a cake mix, because home bakers do not put dough conditioners into their recipes.  The flavor of butter, fresh eggs, and real vanilla extract combine with granulated sugar to create an aroma and taste that is heavenly.  This basic vanilla cupcake recipe is easy, but don't let that fool you – the cupcakes are delicious!

Gather your ingredients and utensils ahead of time.  You'll need a mixing bowl, a mixer, a spatula, a baking tin, cupcake liners, and an oven.  This recipe will make 12 large cupcakes, or 24 small ones.  You will need the appropriate size cupcake liners for the size of your baking tin, and you will preheat the oven to 375°F for the smaller size, but only to 350°F for the larger ones.  

You will also need the following ingredients:

    *  2 Cups all purpose flour
    *  1/2 teaspoon table salt
    *  2 teaspoons double action baking powder
    *  1/2 Cup (1 cube) butter
    *  1 1/4 Cup granulated sugar
    *  2 large eggs
    *  1 teaspoon vanilla
    *  Whole Milk, approx. 1/4 Cup

Begin by preheating the oven to the appropriate temperature for the size cupcake you are making.

Line the baking pan with the cupcake liners.  If you do not have cupcake liners, you may grease and flour the cups as you would for a regular cake, but using liners will ensure that your cupcakes are easily removed from the pan after baking.

Sift the first 3 ingredients together into a container, and set aside.

In a bowl large enough to contain all of the ingredients, begin by creaming the butter. Add the sugar in small increments until the butter has fully absorbed it, and continue to beat it until it has become airy and smooth.

Add the eggs one at a time, blending well, until the mixture is smooth and creamy.

Slowly incorporate the flour into the mixture, then add the vanilla and mix well.  Add milk to obtain the desired consistency.  Batter should be thick, but still pourable.

Fill the baking cups about 2/3 full, and bake on the center rack of the oven approximately 12 minutes for small cakes, and up to 20 minutes for the larger ones.

Allow to cool completely before frosting.  Vanilla cupcakes will accept a wide range of flavors in the topping, and are exceptionally tasty when topped with whipped cream and fresh fruit.  

This vanilla cupcake recipe can be doubled, and the cupcakes can be frozen.  You can also add flavor variation such as some lemon or orange zest, a teaspoon of cinnamon, or flavored herb tea instead of milk.  All are delicious.
